RECIPE: Flax Crackers

Gluten-free doesn’t have to mean all rice flour and corn. These delicious crackers are a touch sweet and pair deliciously with soft cheeses or as an accompaniment to your favorite salad. Plus, the flax is a health boon, providing support for your heart, brain, skin, joints and digestive system. Enjoy!

Flax Crackers

1 cup ground flax seeds
1½ cups filtered water
2 tablespoons whole flax seeds
1 tablespoon sesame seeds
1 tablespoon hemp seeds
1 cup goji berries
2 teaspoons sea salt

Preheat oven to lowest setting.

Mix water and ground flax in a bowl and let sit for 10 minutes. (Will be goopy and gelatinous.)

Add remaining ingredients to the bowl and mix well.

Spread mixture evenly on a cookie sheet and place in oven for 2 hours, with oven door propped open. Use oven fan if possible.

Make notches in the crackers, then flip over and continue cooking for another 2 hours.

Cool for 10-15, then cut and serve.

Makes about 32 crackers.
